Millet Kheer for your sweet tooth is both yummy and healthy! 

They say that dessert does not go to the stomach, it goes to the heart, and well, why not? Isn’t this so true? We all need to end our meal with a perfect and scrumptious dessert. But most of the time these desserts are high in calories or not super healthy. But what if there was a dessert that was both healthy and yummy?

Keeping this in mind, we have with you. We have for you a perfect recipe for a healthy millet kheer to satisfy all your dessert cravings. If you are someone who has an extremely sweet tooth and more often than not needs to end your day with a bowl of something sweet to finish your palate, then this is the recipe for you. 

Ingredients 

  • ¼ cup millet
  • 4 cups milk (almond or non-dairy based can also be used) 
  • 2 tbsps Ganesh desi ghee
  • 1 tbsp finely chopped pistachios
  • 1 tbsp finely chopped almonds
  • 1 tbsp finely chopped cashew nuts
  • ¼ cup sugar or jaggery 
  • A large pinch of nutmeg powder
  • ¼ tsp green cardamom powder
  • Saffron strands for garnish

How to make millet kheer?

First of all, you need to boil milk and keep cooking it for three to four minutes. While this is happening, in a shallow pan, take a tablespoon of Ganesh desi ghee, add pistachios, almonds, cashew nuts, or any other dry fruits you want saute it for a minute or two, and transfer it to a plate. 

Then heat the remaining Ganesh desi ghee add the cup of millet and saute it for 2 to 3 minutes. Then transfer it to the pan of boiling milk and mix everything. Make sure that you occasionally stir the mixture. 

Let this mixture cook for 15-20 minutes until it thickens a little and then add sugar and mix properly. A healthier suggestion here would be to add jaggery powder instead of sugar. 

Add nutmeg powder, green cardamom powder, roasted nuts, and the roasted nuts and mix everything till it is combined into a heavenly mixture.

Make sure that you garnish it with saffron strands before serving.

Pro tip: You can choose to cool the kheer and have it as a cold dessert.
