Ingredients:

1 small bunch of green garlic

2 cups refined flour (maida), plus extra for dusting

1 tsp instant dry yeast

Salt to taste

1 tsp castor sugar

2 tbsps melted butter, plus extra for brushing

2 tbsps yogurt

Onion seeds (kalonji) for sprinkling

To Serve the Kulcha With:

Dal makhani

Green chutney

Onion rings

Lemon wedges

Method:

Prepare the Dough:

Ø Sift the refined flour in a bowl and add dry yeast, salt, and castor sugar. Whisk the dry ingredients together.

Ø Create a well in the centre and add melted butter, yoghurt, and ¾ cup water.

Ø Knead the mixture into a fine dough and cover it with a muslin cloth. Allow it to rest for an hour.

Prepare the Filling:

l Finely chop the bulbs and greens of the green garlic.

Shape the Kulcha:

l After an hour, take the dough and divide it into small balls.

l Place a dough ball on a worktop and roll it into a disc.

l Sprinkle the chopped green garlic and onion seeds on top, then press everything together.

Cooking the Kulcha:

l Heat a tawa and put some water on the base.

l Place the kulcha with the garlic side on top and sprinkle water on the sides.

l Cook for two to three minutes on medium heat with a covered lid.
