How to make Nagpur’s famous Orange Barfi at home

Nagpuri santra burfi or Nagpur Orange Barfi is an extremely famous and popular dish that comes from the state of Maharashtra. The orange barfi tastes both sweet and tangy, making it a favourite delicacy of many.

How to make Orange Barfi?

Ingredients needed 

  • 1 cup fresh orange pulp
  • 1 cup khoya (mawa), grated
  • 1 cup sugar
  • 1/2 cup powdered milk
  • 1/4 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Chopped pistachios or almonds for garnish
  • Silver work for the final touch 

Instructions 

  • Prepare the Orange Juice
    • Peel fresh orange and take out the skin and seeds. Make it a little pulpy, but do not squeeze the entire orange. 
  • Grate the Khoya (Mawa):
    • Grate the khoya and set it aside. Ensure that it is at room temperature.
  • Cooking the Mixture:
    • Heat ghee in a non-stick pan over medium heat. To this, add grated khoya and sauté for a couple of minutes until it becomes slightly golden.
  • Adding Ingredients:
    • Add the fresh orange pulp to the pan and mix well. Keep adding sugar and stirring to avoid lumps.
  • Incorporating Powdered Milk:
    • Add the powdered milk to the mixture and continue stirring.
  • Cooking and Flavoring:
    • Keep stirring the mixture over medium heat until it thickens and starts to leave the sides of the pan. To this mixture, add cardamom powder and saffron strands (if using) for flavour.
  • Setting the Barfi:
    • Once the mixture reaches a halwa-like consistency and starts leaving the sides, transfer it to a greased plate or tray.
  • Shaping the Barfi:
    • Allow the mixture to cool for a few minutes until it’s warm enough to handle. Grease your hands with ghee and shape the mixture into a flat, even layer.
  • Garnish:
    • Sprinkle chopped pistachios or almonds on top and press them gently into the barfi. You can also use the silver work on top for a final and finishing touch. 
  • Setting and Cutting:
    • Allow the Orange Barfi to cool completely and set in the refrigerator for a few hours.
    • Once set, cut it into desired shapes (squares or diamonds).
  • Serve:
    • Your Nagpur-style Orange Barfi is ready to be served. Enjoy the unique citrus flavour!
