How to prepare Nutritious Beetroot Salad in just 20 minutes?

We all know the health and skin benefits of Beetroot, right? Still, it becomes hard to add to our regular diet. A lot of people don’t like its taste. Beetroots are rich in iron and folic acid. It has also a great amount of fiber, Vitamin C, and minerals which can do wonders to our health.  Today, we are going to share the Beetroot Salad recipe, which you can prepare in less than 20 minutes. It is a delicious yet nutritious dish that you can prepare anytime.

What are the ingredients required?

  • 1 Large beetroot
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • ½ cup roasted peanuts
  • 1 teaspoon sugar
  • ½ cup coriander leaves
  • 2 teaspoon virgin olive oil
  • 6 curry leaves
  • ½ teaspoon mustard seeds
  • 1 green chili
  • ¼  teaspoon asafoetida powder ( Hing)

How to prepare it?

Step 1– To prepare this quick recipe, wash the beetroot thoroughly. Cut the edges, grate it in the bowl.

Step 2– Crush the peanuts in other bowl and add them to the grated beetroot. Now, wash coriander leaves. Chop them finely in the same bowl. Add salt, sugar and lemon juice over the mixture.

Step 3– In this step, you need to prepare a tadka. Put the saucepan over medium flame. Add Virgin Olive oil in it. Let it heat. When the oil is hot enough, add mustard seeds to it. After a few minutes, add asafoetida powder (Hing), green chilies and curry leaves. Sauté for few minutes, then pour this tadka to Beetroot mixture. Toss it well using two spoons, serve it immediately.
