- Milk: – 4 cups
- Fresh cream: – Half a cup
- Porridge: -3 tablespoon
- Sugar: -2 cups
- Ghee: – A tablespoon
- Cashews: -A cup (finely chopped)
- Almond: -One cup almond (finely chopped)
- Cocoa powder: -2 tablespoons
- Pistachios: – 2 tablespoons (long cut)
To prepare this delicious sweet dish, chop the dry fruits in a bowl. Next, put a deep-bottomed pan over high flame and add milk in it. Bring it to a boil and then add sugar along with alum in the boiled milk. Lower the flame and let the milk simmer till it becomes half the quantity and the milk begins to thicken.
Once the milk is reduced to half the quantity, add in the glucose and stir well. Next, add ghee in the milk and cook for another 10-15 minutes. You will notice that the ghee will start leaving the sides.
By now, the mixture will be grainy and dark in color. Now, add water to it and stir once again, let the mixture cook for two more minutes. Meanwhile, take a metal tray and grease it with ghee.
Switch off the burner and spread the grainy mixture on the tray; you can use a spatula to evenly spread the mixture. Top up this mixture with chopped dry fruits and keep it aside for five to six hours in the fridge and wrap it with cling film to avoid any smell in it.
Cut off its barfi-shaped grinded and put pistachios and press it with a spoon of light hand. Doda Barfi is ready. Serve it once it cools down.
